What Happens at a Burns Supper

The ritual, 230 years running: guests pipe in; the Selkirk Grace is said; then the haggis itself is piped to the table and 'addressed' — a full dramatic recitation of Burns' Address to a Haggis, climaxing with the knife plunged theatrically in. Dinner: haggis, neeps and tatties with whisky sauce. Then the toasts — the Immortal Memory (the poet's life), the Toast to the Lassies (comic, affectionate) and the Reply from the Lassies (comic revenge).
