Afternoon tea has an order: work UP the three-tier stand — savoury finger sandwiches (cucumber, egg, smoked salmon) at the bottom, warm scones in the middle, sweet pastries and cakes on top. The scone debate is real: Cornish style is jam-then-cream, Devon style cream-then-jam — pick a side and enjoy the argument. Loose-leaf tea is poured through a strainer; milk-in-first vs tea-in-first is another eternal English quarrel. 'High tea' is actually a working-class evening meal — what tourists want is 'afternoon tea' (confusing the two marks you as a first-timer). Add a glass of champagne and it becomes 'champagne tea'. Allow 1.5-2 hours; it's a leisurely occasion, not a quick snack.
